Why some titles stay dark grey

Minecraft Java paints every container's name in one fixed dark grey, and a resource pack can't change that colour. What a pack can change is the words: the game reads colour codes inside its language files, so on dark colours this pack gives each container's name a light colour code — in every language the game has. A chest you renamed with an anvil, or a menu a server sends, isn't in the language file, so those keep the dark grey. On Bedrock the title colour is a setting of its own, and the pack sets it.

Questions

How do I get dark mode in Minecraft?

Minecraft has no dark mode setting, but its menus are pictures a resource pack can replace. Pick Dark mode here, download the pack, put it in your resourcepacks folder (or open the .mcpack on Bedrock) and turn it on. No mods needed.

Why do some chest names stay dark grey?

Java draws every container name in one fixed dark grey that a pack can't change. The pack changes the words instead: on dark colours it adds a light colour code to each name in the game's language files, for every language. Chests you renamed yourself and menus from servers aren't in those files, so they keep the dark grey.

Which screens change?

The player inventory, chests and large chests, ender chests, barrels and shulker boxes, crafting table, furnace, blast furnace and smoker, anvil, enchanting table, brewing stand, hopper, dispenser and dropper, crafter, beacon, villager trading, stonecutter, loom, cartography table, grindstone, smithing table, horse inventory, the creative tabs, the recipe book and the menu buttons.

Does it work on Bedrock?

Yes, for container screens: the pack recolours Bedrock's panel, slot, arrow and container button pieces, Classic and Pocket UI, and sets Bedrock's own title colour on dark themes. Bedrock's main menus and settings are drawn differently and stay as they are.

Will it change anything else?

No. Arrows that fill up, flames, bubbles and anything with colour of its own stay as Minecraft draws them, and the pack only contains the screens it recolours, so it works on top of your other packs.
